This cable TV series has nothing to do with knives or cleavers. The "choppers" of the title are motorcycles -- or to be exact, custom-built motorcycles, designed exclusively for their owners and creators. Flying in the face of stereotype, the series showed how many cycle enthusiasts are not leather-jacketed hellraisers, but people who carry on normal, conservative lives, sometimes in the world of big business.
